How it all began |

After
getting married in Canada in 2001,
Sarah and Derek Walsh (a.k.a. Wally)
sold their house in Dublin and
headed to Spain to buy a sailboat.
Their plan was to fulfill their
dreams of traveling by sailboat and
explore the different cultures and
food of the Mediterranean.
Three years into their sailing adventure, Sarah and
Wally pulled into one of the most
historic ports in history; Venice,
Italy. It was there that they fell
in love with Italy and met Toni and
Anna who inspired Sarah and Wally
and planted the seed of passion for
Italian food. Having arrived with
only 5-10 words of Italian, the next
6 months in Venice looked
challenging. However, Toni and Anna
not only taught them many
traditional family recipes, they
also patiently spent hours teaching
Sarah and Wally their language. |

After much discussion one day, Sarah
and Wally expressed that they would
love to learn how to make fresh
pasta, “La pasta fresca”. Toni and
Anna embraced the idea with gusto
and brought them home to their house
for their first pasta fresca lesson.
It was love at first touch and
taste! From that moment on, Sarah
and Wally were convinced that fresh
pasta was something special and
delicious. A month later all of
their Venetian friends threw Sarah a
birthday party and for her birthday
gift they gave Sarah her first fresh
pasta machine. And so it began…

Upon returning to Canada in 2005,
Sarah and Wally felt that there was
a need for fresh pasta in The Valley
and that it would compliment all of
the other fantastic local food
available. Prontissima Pasta was
started, not only to fulfill a fresh
pasta void in The Valley, but with
the idea to provide a fast, easy,
gourmet meal that people could take
home and put together. “Pronto”
means “ready” and “issima” means
“very” or “really”, so together,
Prontissima means a really ready
meal: highlighting that it is a
quick meal. As well as the gourmet
fresh pasta, Prontissima also makes
a variety of delicious artisan pesto
to go with their pasta, completing
the quick, gourmet meal.
